Green Smoothie Bowl

8 min·1 serving·approx. 340 kcal

A smoothie bowl is a smoothie you eat slowly, with a spoon and a bit of crunch on top. It’s a bright, fresh way to get a handful of greens in before the day gets going, and you honestly can’t taste the spinach.

Ingredients

  • 1 ripe banana, sliced and frozen
  • 80g frozen mango chunks
  • A large handful of spinach (about 30g)
  • 80ml unsweetened plant milk
  • To top: 1 tbsp mixed seeds (such as pumpkin and sunflower)
  • 20g granola (certified gluten-free if needed)
  • A few berries or slices of kiwi

Method

  1. Add the frozen banana, mango, spinach and plant milk to a blender.
  2. Blend, stopping to scrape down the sides, until thick and smooth. Add a splash more milk only if your blender is struggling. You want it thicker than a drinking smoothie.
  3. Spoon into a bowl and smooth the top.
  4. Scatter over the seeds, granola and fresh fruit, and eat straight away.

Tips

  • Keep bananas ready: peel, slice and freeze ripe bananas so you always have the base on hand.
  • Iron boost: spinach and pumpkin seeds both contain iron, and the vitamin C in the fruit helps your body absorb it.
  • Short on time? Add a little more milk and drink it as a smoothie on the go.
